Monday 14th –
Monday was a day spent mainly at my spot on the floor in the living room.
Not sure why I sit there rather than on the couch but whatever works eh.
Coffee and the candy bowl nearby, all the fuel I need for catching up on the life documenting.
I made cornbread with some cornmeal we had bought in Gran Canaria.
It was a bit closer to flour consistency then the gritty meal I’m used to but it turned out fairly decent.
The night before we had bought some rib eye lunch meat so I decided to attempt a spin-off of a pinterest recipe I had seen.
Rib eye flattened out and then a sauce spread over it, including a layer of cheese and bacon, then rolled, secured with toothpicks and browned in left over bacon grease and Worcestershire sauce.
The meat was way thinner then I had expected so it only made four but luckily I made them early in the day and had plenty of time to think of some side dishes 😏
The cornbread, lemon cucumber and store-bought, salt and pepper fries joined the rib eye rolls.
Fiji enjoys bugging the heck out of me while I type, attacking my feet and legs or trying to help me write by joining my fingers on the keyboard.🙄
Mike liked the rib eye rolls and so did I, they were flavourful enough that the lack of them was hardly noticed.☺️
Tuesday 15th –
I decided I would like to feel more productive than the previous day so I got the coffee brewing and began the cleaning.
Bed made, floors swept, cupboards cleared, bathroom cleaned and everywhere freshened slightly.
Mike ordered an electric mixer for me and that arrived so that was pretty exciting.
Also went to check to the mail and not only did I have some but it included an envelope from home 😄

Suddenly glancing at the window, I see someone waving to me.
Mikes other great-aunt had decided to stop by for a visit unexpectedly, so it was providence that I had decided to clean that morning 😜
She showed up just as I was starting to consider what supper should be, so by the time she left, Mike was bound to be home within half an hour and I had no clue what to cook.
So he suggested date night 😊
Not only had I cleaned the house but I had showered and done my hair… normal for most people yes but not for this Canadian, in a cottage away from people, in the country side of Holland 😜
So I was ready for the surprise destination date within minutes.
He picked me up and we headed out for an all you can eat Japanese dinner.
You choose five dishes to be brought out per person, per course.
There was some really tasty dishes and some really not…
I think I don’t like REAL sushi… something about sticky rice and smelling seaweed doesn’t sit right on my palette.
We would have been allowed 50 dishes between us but we stopped at 16 plus dessert.
You would be charged if you left too much on your plates so it kind of makes you afraid to try anything incase you dislike it.
But it was a nice experience and I appreciated Mike giving me a night off from cooking.
Wednesday 16th –
Mixed Italian vegetables joined burger, cheese, spices and Italian dressing brought from Canada to complete a pasta casserole for supper.
Then to the days task… sugar cookies.
Turns out the bag of sugar I bought was corse not fine, so when mixed with the butter it wasn’t the right texture.
I thought by letting it warm up more it may help things blend, I think it did… a little.
Mixed that up and then started cutting out the cookies.
I’m so glad the recipe was small or I would have cut cookies all day.
I think sugar cookies are a cookie that should be made with friends or family helping 😁
Once those were baked I began the process of decorating.
Of course pinterest and instagram left me with unattainable decorating aspirations but one still tries and hopes for partial success.
‘Holland Ingredients’ export manager A.K.A my husband, supplied with me with the food colouring for the icing and it worked very well.
I decided to thank him with a couple of non winter/christmasy themed cookies and try the BMW symbol instead.
He came home and we ate the casserole, it was better than i’d been thinking it would be so that’s always nice.
But the food enjoyment was short-lived and it was back to cookie decorating.
Though I had an embarrassingly small amount of cookies to dress, I only had one icing tip, thus the lengthened process.
Finally those were done and I hated them and decided never to make sugar cookies again and figured they were all going to be thrown out in a few days.
Blasted holiday spirit.
Went to bed fairly early as I was joining Mike on his work trip to Belgium come morning.

Who knew getting a new blender would become ‘exciting’ to receive in the mail. Never would have imagined that for you 😜

Haha, a mixer… much more exciting than a blender 😉
But it will be returned because Judith gave us a very nice one for a wedding gift!
