Watermelon Cucumber Salad

This recipe was given to me by Aunty Doreen (my moms sister)πŸ˜ŠπŸ’•
We have made and enjoyed it on several occasions, mostly in the summer time when this fresh, cold salad sounds extra appealing.
Mike  also loved it after his first time eating it with us and it’s probably his most requested form of ‘salad’ 😏



4 cups watermelon, cubed

4 cups cucumber, chunked

3 green onions, chopped (We never add in the onions since most dislike those vile greens)

1 1/4 cups crumbled feta cheese



1/4 cup vinegar

1/4 cup white sugar

1/2 cup olive oil

1 tsp. salt

1 tsp. dry mustard (I cut this in half usually)

Blend the dressing ingredients well and toss with fruit and veggie mixture a few minutes before serving, allowing it to blend and cool in the fridge but not so long that it becomes soggy.
