Banana Chocolate Chip Muffins

 

I always do at LEAST a double batch, considering I alone would eat four of them for breakfast if I allowed myself 😜

 

Ingredients:

1 3/4 cups flour

1/2 cup sugar

3 tsp. baking powder

pinch of salt

1/2 cup chocolate chips (I do a heaping half a cup, mom does a sad half a cup, you decide;)

1 egg

1/4 cup cooking oil

1/4 cup milk

3 medium bananas

 

Directions: 

 

Mix first five ingredients thoroughly in a large bowl.

In a separate bowl, beat egg until frothy then mix in oil, milk and bananas.

Add into the dry ingredients and stir to moisten, batter will be a little lumpy.

I use a large cookie scoop for the muffin tin filling and then bake them for around 20 minute at 400 F.

 

I think the best way to eat them is warmed up with butter.

Warning, this next bit sounds weird but I learnt it from some friends 😏😋

You can also eat them that way but add a slice of marble/ cheddar cheese too.
Sounds odd, tastes great.
Sadly I’ve yet to find marble or cheddar cheese here in Holland though 😔

Hello humans 😊 This is where you learn about me I suppose, though anyone reading this right now most likely knows all the boring details ;) I am Jessica Rose Peters-Hagenouw. I grew up and have lived all of my years up till November 2015 in Saskatchewan, Canada. Making summers that are extremely short and winters that never end, vast open spaces, northern lights, unthinkable amounts of mosquitoes, lakes, forests and people waving to you on the grid road all different things that mean = Home. But Home is not where I'll be for some time. My husband is a Dutchman, living in Europe. Therefore I too have been living in Europe for the last few months. The reason I started this little blog/journal/writing thing, is to document a bit of my "whole new world," for those at home who wont be awake at 3:00 am wanting to hear about how I couldn't find flour at the grocery store.
