Ingredients:
1 tablespoon olive oil
1 onion, chopped
3 cloves garlic, minced
1 carrot, roughly grated
6 cups chicken broth
½ cup orzo
1/2 lemon, zest and juice
½ tsp salt
¼ tsp pepper
1 tsp dried basil
Instructions:
In a large pot heat olive oil before adding in garlic and onion, sauté until translucent and then add in the grated carrot.
Sauté for just a few more minutes before pouring in the chicken broth.
Season with salt and pepper.
Add in cooked orzo.
Squeeze in juice of half lemon and add zest, salt, pepper and basil.
Let simmer and adjust seasonings if needed.
I followed the recipe pretty closely ingredient wise buuuut I’m actually one of those people who reads the recipe and then goes off onto my own path without measuring much 😜
Mainly I made the soup a bit bigger so hence a little more of everything.
I used an oregano flavoured olive oil we bought in Greece and I used about three small/medium carrots instead of one.
I also fried up one chicken breast and just shredded it before adding it into the soup… because I had to feed the soup to my husband 😏
As I’m sure lots of you know first hand, soup is a so so dish to feed to most guys but even more so if it’s meatless so I had to make some aspect of it for him 😜
Other than that I can’t remember any changes that were too crazy so best of luck and I hope you enjoy it as much as I did!! 😊🍋
