Purely For Practicalities Sake

Sunday Dec 11th –

We took ‘the day of rest’ literally πŸ˜’

Sick in bed we stayed for much of the morning and once we left the comfort of the room it was mainly a relocation to the couch πŸ™„

Mike went to the nearby co-op once it opened at noon and got strawberries and bananas to top the French toast casserole he’d got me to make the night before 😏

Brunch was served πŸ“πŸŒπŸžπŸ΄

A nap was taken 😴❀️

I did complete the days verse later on in the day and was rather pleased with the results pounding head pushed aside momentarilyπŸŒ΅πŸ’•

Mike made us supper 😊
(Does anyone else hate being sick and still having the normal amount of hunger?? Like, I’m suffering… I should at least be loosing some weight or something πŸ™„)

Supper was good though πŸ˜‹πŸ‘ŒπŸ»

Monday Dec 12th –

I awoke feeling better, if one can call coughing dryly and constantly, better 😏

But things had to be done! Canada Awaits! 😁❀️

First thing, finish the mini marshmallows my sis sent me so they didn’t go stale while we were gone… it was purely for practicalities sake, I’m not saying I enjoyed it πŸ™„πŸ˜

Next, prepare some little packages to leave with the family we wouldn’t be spending holidays with.

My first time making caramels began and in the end of the long process, I think I can say the result was pretty pleasing 😊

I haven’t been able to find corn syrup here anywhere so I had to find a recipe that used honey and it gave the caramels a little bit of a different flavour but hopefully the recipients consider it a good difference πŸ˜‰πŸ™ˆ

After the boiling, stirring, boiling more, pouring, semi cooling, salt sprinkling and cutting up was finished, the wrapping began😬

I did a fair bit of them and then supper had to get started on, so I put the caramels aside and decided Mike could try his hand at candy wrapping later that evening 😏😜🍬

Supper was Greek style.
Greek fried burgers with toast, fried potatoes, tzatziki sauce, citrus cucumbers, and my attempt at phylo baked feta.

It was tasty but the feta here tasted a bit more sour then I’m used too but if we hadn’t eaten the real thing in Greece and had that to compare it too, I would have said it was a pretty nice turn out πŸ˜‹

After supper Mike and I wrapped up the rest of the caramels and got a few things ready for the next days plans, including finishing the paperwork required for me to stay here, until we can go to Canada.

Adulthood equals paperwork I think πŸ™„πŸ“‘

Hello humans 😊 This is where you learn about me I suppose, though anyone reading this right now most likely knows all the boring details ;) I am Jessica Rose Peters-Hagenouw. (Always thought I'd be able to pronounce my married name but hey, life doesn't go as we plan.) June 11, 1995, tis the day Robert and Bonnie Peters received the most adorable, amazing, wonderful, surprise 3rd child they could have dreamed of. Speaking of being the third child, I have an older brother and an older sister. Both of whom are married and have wee little families of their own, making 'Aunty Jess' another name I go by. I grew up and have lived all of my years up till November 2015 in Saskatchewan, Canada. Making summers that are extremely short and winters that never end, vast open spaces, northern lights, unthinkable amounts of mosquitoes, lakes, forests and people waving to you on the grid road all different things that mean = Home. But Home is not where I'll be for some time. My husband is a Dutchman, living in Europe. Therefore I too have been living in Europe for the last few months. The reason I started this little blog/journal/writing thing, is to document a bit of my "whole new world," for those at home who wont be awake at 3:00 am wanting to hear about how I couldn't find flour at the grocery store. Thanks for stopping by and taking a peek into my little life 😊
