Citrus Cucumber Salad

I credit my mother-in-law for this recipe!
I’d never had this style of cucumber salad, until eating at her place but it quickly became a favourite!

It’s easy to make and so far all who’ve tried it, generally love it 😉

As most my recipes, it’s pretty open to interpretation 😜

You can cut the cucumber thinly or use a mandolin slicer, I like to just use a knife.
You can leave the skin or remove.
All personal preference 💁🏻‍♀️

I usually make it at least 20 minutes before dinner so it can get nice and juicy 😉👌🏻

 

Ingredients:

1 large cucumber
1/4 cup sugar
1 1/2 lemons

Directions:

Peel or don’t and then mandolin or slice, the cucumber.
Add in the lemon juice and sugar, mix and refrigerate until serving.

Easy as one, two, three! 💁🏻‍♀️

Sometimes for something different I add in some strawberries & I’m going to try adding in mint the next time it’s available
