I am not much of a breakfaster but I will do brunch if the urge arises 😉
I don’t enjoy morning cooking that includes too much effort or to many dishes and personally, nothing overly sweet either (usually 😜).
So, this egg breakfast that comes together quickly, easily and all in one dish, has fast became a flavour packed favourite and easy to change up to suit your own tastebuds 😄
I hope you enjoy it as much as we’ve been, we have eaten it with a side of toast or some fruit!

I’d never had this style of cucumber salad, until eating at her place but it quickly became a favourite!

Saturday Nov 4th –
Snow had fallen throughout the night, so it was a fresh, clean palette that greeted my eyes that morning.
I impatiently waited for a fresh cup of java to brew, so I could gather strength to go into town with Mike, to try to scratch things off the fairly lengthy, ‘needed for house’ list 😏
There was a lot of looking and perusing and also finding out that picking cutting boards, can openers and garlic presses, is much harder than I would at first think…and also, most toasters are ugly 😜
There are limitless options for those items and a vast price range… so how does one even go about picking???
I’m even more grateful now, for the huge amount of kitchen stuff I already have from the shower/wedding presents 😬💕👌🏻
I did find this rug I really like and think it will go in the kitchen.
Greek Yogurt Soufflé
These can be eaten for a light breakfast or dessert and though the process is a little more involved than my usual recipes, I think the effort is worth the reward when it comes to these light, fluffy morsels with hints of sweet vanilla 🤤👌🏻💕
Ingredients:
1 cup greek yogurt
3 large egg yolks
3 large egg whites
3 tbsp flour
1/8 tsp salt
2 tsp vanilla
1/8 tsp cream of tartar
1/4 cup of sugar
butter or coconut oil to coat ramekins

I used the recipe from thecleaneatingcouple.com as a base guideline, but I have changed a few things after making it for us a couple of times, so I’ll write that version out here.
Feeds four (with some leftovers, if everyone was only ‘just ready to eat’ and not ‘crazy hungry’ 😜)
