Italian (or not) Bread

Italian (or not) Bread

This recipe comes together easily and pretty quickly, as far as bread recipes go… two things I appreciate when it comes to bread making!
It can also be tweaked and personalized very easily to go with whatever flavour you’re looking for πŸ‘ŒπŸ»

Enjoy and not only good luck making it but also in doing your best to not eat a whole loaf or two yourself, once they are out of the oven πŸ˜‰

Ingredients:

2 1/2 cups warm water
2 tbsp yeast
2 tbsp sugar
1 tsp salt
5 1/2 cups flour
1 egg white / oil (I used rosemary infused olive oil)
2 tbsp Italian seasoning*
1 tbsp everything bagel seasoning (optional…but nice πŸ˜‰)

*the seasonings can easily be adjusted to suit personal preferences and make other flavours of bread, so go ahead and play around with combinations!

Instructions:

Pour the water, sugar and yeast into a bowl and let it sit for 10-15 minutes until the yeast has activated.

Add the remaining ingredients and mix it all together until well blended.

Move to a warm area, cover and let rise for 30 minutes.

Preheat oven to 450Β°

Punch down the dough and then divide and form into three loaves.

Using a sharp knife, score the tops of the loaves and then brush with either egg white or oil.

Let the loaves rise another 5 minutes.

Bake for 12-15 minutes.

I brushed a little butter over the loaves and ground some corse salt on top, once I removed them from the oven.

I’d love to know if you make this/enjoyed it!

Doable And Delectable Overnight Bread

I give all the credit to my mom (Diamond and Willow)Β for finding and introducing this recipe to me.

Bread making doesn’t get any easier and the outcome doesn’t get much better! In my opinion πŸ˜‰

It’s also super customizable… If you try it, I’d love to see or hear about it, either with a comment here or a tag on instagram @JemstoryΒ πŸ™‚

Ingredients :

2 cups all-purpose flour

2 cups whole wheat flour

2 tsp salt

1 tsp active dry yeast

2 1/4 cup warm water

1/3 cup sunflower seeds*

1/3 cup dried cranberries*

* The seeds and cranberries are up to you as far as personal preference goes. The original recipe calls for 1/3 cup flax seeds but I didn’t have any so I threw in the cranberries instead. You can change up the seeds and berries depending on your taste buds or pantry innards πŸ˜‰

Directions :

In a large bowl (preferably with a lid), mix the flour, salt and yeast and seeds together.

Pour the warm water into the bowl and using a spatula, mix until it is all incorporated.

Cover the bowl with plastic wrap or a lid and let it sit on the counter overnight or for around 12 hours.

(If you use a lid, just check it after a couple of hours to make sure it didn’t pop open from the yeast expanding πŸ˜‰

Pre-heat your oven to 450 f degrees.

Place your cast iron, dutch oven or clay pot and lid (I use my moms Pampered Chef Clay dish), into the oven so it heats up as well.

Once the pot has heated, remove it from the oven and take the lid off, as that is too tricky to do after this next bit πŸ˜‰

Flour your work surface and hands VERY well and with said flour covered hands, gently remove the dough from the bowl onto the counter and roughly shape it into a ball.

Take the ball of dough and drop it into the pot.

Cover with the lid and place it back into the oven.

Bake for 30 minutes with the lid on, after which remove the lid and bake for another 15-20 minutes until the top is nice and golden and crusty looking.

Remove from the oven and after a few moments remove from the pot and let it cool.

That is if you can control your desire to taste test a slice with a big slab of butter πŸ˜‰

Handcrafted Memory Making

Thursday Nov 30th –

My morning began with a multi grain bread.

It was thicker and stickier than Mother’s usually is supposedly, so I did something amiss but after baking was completed, it tasted pretty sufficient πŸ˜‰
I hate raisins in things but bread with dried cranberries ? πŸ€€πŸ‘ŒπŸ»πŸžπŸ₯–

I made cream and herb chicken for supper though the recipe was heavy on the thyme in my opinion.

Rice and steamed broccoli went along side the chicken and then the leftover peanut butter and pecan pies were finished off with great pleasure πŸ˜›

Our grocery order was picked up by the bro and delivered to our door that evening, the strawberries were a bit moldy but besides that, everything seemed just dandy and totally worth doing again πŸ˜‰

After a leisurely morning, Mom and I headed to Saskatoon to go check out the Flock and Gather craft show. Continue reading “Handcrafted Memory Making”

Fabrications

Monday Oct 16th –

We worked at the house all day and Mother joined us part way through as well, to do some caulking in the kitchen area, as that is a task neither Mike or I feel confident doing 😜

Much else was also worked on 😏

It’s so close to being done, that I truly want to keep this last bit as much of a surprise as possible, so no more pictures or details of what is being completed house wise, until we are DONE βœ… 😁 🏑

Concierges Of The House And Grounds

Tuesday June 27th –

The time of sitting around and not doing anything because the ma and pa were away, had come to an end 😎

I decided to make bread.

It was the second time I’ve made bread alone and it wasn’t as daunting as I always seem to think it is (though I almost don’t dare say it, so that Mom doesn’t make me do it more oftenπŸ˜‰).

It did take a good chunk of the morning though, so after everything, including the taste test, was finished up with, I headed outside.

The rock paths needed weeding, some plants watering.

I decided since I was out and messy anyways I’d also clean up the garage a little bit.
Moving some of Mike and my items to the front, so we could haul it to the house next time we went and in doing so, give Mom a little bit of her garage back πŸ˜‰

I got potatoes sliced, soaked and seasoned so that I could try deep-frying them as per Mikes recent requests.

They turned out really well!

(But don’t most deep-fried things? 😜) Continue reading “Concierges Of The House And Grounds”

‘And It A Nice Day’ Title Chosen By Niece ;)

Monday June 5th –

Mike and I got up and ready for the days work ahead of us.

With him heading to the family mill, after dropping me off to clean a new furniture store in town before they open up shop.

I was asked to come help the lady I’d previously cleaned with and together, we wiped, scrubbed, vacuumed and tidied steadily, for 8.5 hours 😬

Time went by fairly quickly but come 3:00 ish, my energy reserves were beginning to fail me.
My feet and arms not used to continual usage, hours on end 😜

It was a good day of hard work but once Mike came to get me at 5:30 I was more than ready to kick my shoes off and tend to my wounds.
A sliced arm, stubbed pinky and cardboard cut knuckles making me hope even harder that I can continue to sell the cement items 😜

Mike had gotten me a Starbucks iced coffee but since he’d asked for less ice, they had just filled the whole thing with milk and it was pathetic tasting πŸ™„
So in accordance to Starbucks policy, I went in and got a new one made free, with an extra shot of espresso πŸ˜Žβ˜•οΈ
