Experiencing My Previously Experienced Experiences

Wednesday Feb 1st –

Doesburg day ⛪️🏘

After a quick breakfast of apples with a yogurt fruit dip ( thanks epicure – Epicure Summer Berry Dip  ) it was time for us to show Zoe the town Mike grew up in.

And also to make sure loempias got tested😜

The sun was shining so it was a nice day to do some town touring, which Zoe and I did while Mike took care of some car stuff since he would be taking the Audi back to the dealership… it was going to be a tough day for him 😏😋

Zoe and I walked around town and it is such a nice thing to be able to express things to someone who sees the same oddities/differences that I do 😋

After we had browsed throughout town, Mike was finally able to join us to eat👌🏻

It’s also just as nice to be able to share the things I’ve found to enjoy with a friend from home, like loempias 😎

Happily Avoiding Life Stuff

Monday Jan 30th –

We went from being busy from 9-9 for three days, to pure relaxation and road trip recovery😜

Each of us rolling out of bed at different times and relocating to the couch or kitchen island in a matter of moments.

Mike as high energy as ever, wanted to do something 😏

Zoe and I, did not.

I know we slept during the road trip and we walked only in spurts but still!
Maybe its pathetic, but I find the effort of preparing ones self for public three mornings in a row, sorting through and repacking suitcases and eating/walking in the constant company of humans (strangers, more so than Mike and Zoe😜) is tiring 😬

I feel I can safely speak for Zoe in this matter and say she agrees with me 😋

Mike on the other hand, does not understand… and he was the one who had driven?!

Oh well 💁🏻

Inge, Judith and the kids did stop by for a short visit late morning and Mike and I were the lucky recipients of more of the salami I’ve talked about before 😁 (Straight Up Awful… Awfully Good )

Pizza was prepared for our lunch and then Mike left to go do some errands/clean out the Audi since it soon won’t be ours any longer 😬

We contemplated going to the store but I decided nothing we needed was pressing enough to actually go out for, so we happily avoided the task 😜

‘Lazy’ Cheesecake

I thought for sure that I had shared this recipe before but I guess not and it’s high time to remedy that issue!

I love this cheesecake style dessert for a number of reasons, it’s super simple and easy to whip up and tastes amazing as a dessert, snack or breakfast (preferably enjoyed with coffee at any of said times😉).

I’ve taken to calling it ‘lazy’ cheesecake because obviously enough, it’s super easy annnnd because I always forget the real name it goes by 😜

(Real name, Sopapillas Cheesecake)

 

 

Ingredients :

 

2 pkgs refrigerated crescent rolls
2 pkgs (8 oz each) cream cheese, softened to room temperature
1 cup white sugar
1 Tbsp vanilla extract

Sputtering Nothing 💦

Tuesday Nov 15 th –

 

 

 

The day we forgot the water was being turned off 😬
There were notices posted around the building stating that on Tuesday, there would be no water and we took note and talked about it many times!

Only to wake up on Tuesday and go to run the water and be greeted by a sputtering nothing…

And we were out of coffee beans, so not the best morning around 😏

I heated up some milk and we had chia latte mix with some instant coffee for some sort of caffeine intake and I then settled in to write/edit pictures.

The water actually came back on around 2:00, though hot water didn’t follow until later but it was enough to feel like I could do a few things.

Like bake a lazy cheesecake 😁

You see, I don’t have a ton of dishes, so when I bake, a dish or two probably has to get rewashed and reused a few times during the baking process, thus needing water to bake.

The cheesecake turned out nicer then usual actually, the sugar and cinnamon topping becoming an even golden color over the entire thing👌🏻

I love this super easy cheesecake, (recipe will follow 😉) though it’s a bit on the sweet side so coffee would have been delicious with it 😕

Straight Up Awful (…Awfully Good)

Sunday Nov 13th –
 

Mike was my driver and actually my translator once again.
He wondered how he did but really, unless he was silent more than half the time I would have no idea if he did badly, I don’t understand German, hence needing the translation Michiel😏
But I think he did well 😉

As we were dismissed from church, my stomach was growling immensely, causing my mind to wander to more lunch like things 😬

I thought of the spicy, potato like pastry Mike and I had on our honeymoon, of the gravy filled, sausage and pie like dish eaten in Switzerland, of the beef patties eaten years ago in Jamaica.
It was alllll coming back to me in those few moments.
The foods I longed for but would probably never eat again…

But then we went out for Greek food for lunch and I forgot about it 🙈


Lunch was delicious, as usual there at Greek restaurant by the train station 😏👌🏻🍴
