Little And Less

Tuesday Oct 3rd –

If I don’t keep up with writing, I remember nothing πŸ€·πŸ»β€β™€οΈ

 

I know I worked out (trying to get back into after the trip to Az ruined meπŸ™„) and Mike worked at the house, putting up some more trim and what not.

He checked the mail and the wedding photo albums for our mothers had arrived and they looked great, so we happily awaited ours, which would be slightly larger πŸ’‘πŸ‘ŒπŸ»πŸ“š

Buffalo Chicken Spaghetti Squash

Due to popularity on my Instagram stories and on our table, I give to you, Buffalo Chicken Spaghetti Squash!

I used the recipe from thecleaneatingcouple.com as a base guideline, but I have changed a few things after making it for us a couple of times, so I’ll write that version out here.

Feeds four (with some leftovers, if everyone was only ‘just ready to eat’ and not ‘crazy hungry’ 😜)

 

 

 

Now, I know this picture doesn’t make it look THAT appealing but that is because it tastes good and I didn’t want to waste time trying to get a good picture, when I could spend that time getting it in my belly!

 

 

 

Ingredients: 

 

1 large spaghetti squash

3 cups of cooked, shredded chicken

1 1/2 cups chopped broccoli

1 cup shredded cheese

1/4 cup shredded parmesan

1/3 cup Frank’s Red Hot Sauce*

Canadian Living Pasta

Now as far as a recipe post goes, this is ridiculously easy as it’s just the link to the recipe 😜

 

I would have posted it sooner but for some reason I couldn’t find it on Canadian Living’s site, but now I have and I urge you to go try it πŸ˜„

Personal Suggestions

For a healthy tweak, I would cut the required oil in half and instead of combining the pasta, sauce and cheese (we used Asiago) in one pot as suggested, just spoon the sauce over each portion.

We enjoyed it with the suggested shrimp and I also added in 1/4 cup of pine nuts into the sauce, and loved the extra crunch.

This seriously became a fast favourite and I have already made it at least 5 times in a couple months πŸ˜πŸ‘ŒπŸ» 🍝

The Cold, The Heat, The GuiltΒ 

Tuesday Sept 4th- 

 

  

Morning brought with it an omelette (which I flipped, in the pan, without making a mess and using just a flick of the wrist πŸ’πŸ») post workout and then much blogging, trying to get some recipes proof read by the mother, before I leave for a couple of weeks.

(She reads everything before I post it usually. Fixing confusing things and adding comas where my brain didn’t think to so I am sorry if these posts make less sense then normal πŸ˜œ)

I’d went through my assortment of clothing a few days back, trying to let go of the few things that I’ve hung on too, in hopes of them eventually working out and then never using them anyways πŸ˜

Moms turn to do the same thing, came that morning and I was her audience/judge.

Saying yes or no…or simply making the appropriate faces to show my emotion towards certain pieces, was enough of an answer πŸ˜‹

Lunch was a tasty beef barely soup, one of my favourites πŸ˜„

 

Though I am not looking forward to winter at all… the fall comfort foods are calling πŸ˜¬πŸ˜‹

The sis and littles came over for a visit and while we did that, Hubster and Mom gave me a pedi πŸ˜‹πŸ‘ŒπŸ»

(Mom did the scrubbing/rubbing and Mike did the french tip painting πŸ™ˆ)

Mom did her best to do my fingernails but with bad lighting and her wearing glasses now… her best…had seen better days πŸ˜πŸ€“

 

The packing had to begin eventually, though I did push it back until the evening.

Bran Muffins Revised

Bran Muffins Revised

 

So I really like bran muffins and I totally forgot that I did 😜
So when my sister-in-law sent some over and they were quickly eaten up, I decided to try to make a healthier version of the recipe we generally use.
They turned out nicely but they were not overly sweet by any means, which we personally, were ok with.
If you choose to add in the raisins, that would up the sweet factor, I just can’t withstand raisins in any kind of baking so I left them out 😬

I love having a muffin warmed up with a little smidgen of butter and a slice or two of marble cheese πŸ€€πŸ‘ŒπŸ»

 

 

Ingredients:

4 cups Bran Flakes cereal
2 cups All Bran cereal
2 cups boiling water

1/4 cup butter or margarine
3/4 cup applesauce
3/4 cup packed brown sugar
3/4 cup honey
2 tablespoons maple syrup
4 eggs
4 cups buttermilk

4 cups whole wheat flour
2 tablespoons baking soda
1 tablespoon baking powder
dash of salt
