Bran Muffins Revised
So I really like bran muffins and I totally forgot that I did 😜
So when my sister-in-law sent some over and they were quickly eaten up, I decided to try to make a healthier version of the recipe we generally use.
They turned out nicely but they were not overly sweet by any means, which we personally, were ok with.
If you choose to add in the raisins, that would up the sweet factor, I just can’t withstand raisins in any kind of baking so I left them out 😬
I love having a muffin warmed up with a little smidgen of butter and a slice or two of marble cheese 🤤👌🏻
4 cups Bran Flakes cereal
2 cups All Bran cereal
2 cups boiling water
1/4 cup butter or margarine
3/4 cup applesauce
3/4 cup packed brown sugar
3/4 cup honey
2 tablespoons maple syrup
4 cups buttermilk
4 cups whole wheat flour
2 tablespoons baking soda
1 tablespoon baking powder
dash of salt

Monday May 8th –
Mother returned from her weekend away and we caught up on the goings on over leftover shrimp pasta 😏
Her dog bitten leg had morphed into a yellow and purple, swollen lump, with teeth scrapes visibly seen across it all.
She had been placed in charge of bringing back plants from Dad, for my sister-in-law and I 😊
Which she advised him against, telling him flowers aren’t top on my list but this time the potted variety was perfect 😉💕👌🏻
Mike and I had been considering doing up an outside planter and decided we didn’t neeeed one… so now I get one anyways! 😋
Mike came back from work with burnt fingertips 😬
Having slipped and tried righting himself by reaching out and grabbing the wrong thing, the exhaust pipe 😖
His pain got him enough sympathy that the requested banana chocolate chip muffins he so badly wanted, were made.
Even though I’d considered and promptly decided NOT to make them earlier in the day😜

Tuesday April 18th –
Mom went to town and Mike was working, so I had a day of being alone with my thoughts😜
It began as any day should, if your Mom made cinnamon buns the day before 😉👌🏻💕
After the warm and buttery, cinnamon bun breakfast was done with, I had a strange urge to feel useful, (odd I know😏) so I decided to straighten up the garage/yard from the extra dirt and wind-blown garbage that spring tends to bring with it.
9 bananas stared at me once I went back indoors, so out came Moms trusty ol’ Bosch mixer and a triple batch of banana chocolate chip muffins took shape.
(Which I talked more in-depth about in my last Jem Moment 😋)
Mom and Mike returned from their days out and then quickly left me once again, off to play pickle ball for the evening 😏

For the first time in foreverrrrrr (said in a song like voice thanks to Frozen) … I was able to bake a triple batch of muffins 😄👌🏻😜
• Banana Chocolate Chip Muffins •
And it probably took a shorter amount of time to do, than one, single recipe took to bake in my little wee oven back in Holland 😜
How lovely It was to open the pantry and find all the ingredients ready and a large mixing bowl that fit them all without a problem, big muffin tins and an oven that baked almost all of the muffins, AT THE SAME TIME! 😳👌🏻
Back in the day, when Mom would ask for a triple or even quadruple batch to be made up for us and the guys lunches/breakfasts, it would be disheartening, thinking of the amount you’d be working with and now, to think of being able to make that many at once makes me happy!
How time changes things 😜
But really, if your going to the effort of making something and getting everything out anyways, why wouldn’t you want to make extra?
Whether to give away or freeze or just over indulge in, I personally think it is the way muffins should be made 😎
Saturday March 11th –
I hadn’t went into ‘Tout Patisserie’ the day before, but Mom and Mike thought of me and purchased a pretty, lemon meringue tart 🍋💕
Mom and I shared it for breakfast and my only regret was that I hadn’t tried one from there, sooner 👌🏻
A very lemony (though real lemon flavour, not fakey) creamy filling was inside of a slightly sweet crumb like crust, topped with charred meringue 😍
So tasty 😁
(My mouth literally started watering while I wrote about it 😜)
My #AlphaGetToKnowMe writing/illustrations were getting behind so the rest of my morning was spent trying to write one out.
Taking much more time then I had hoped 🙄
I then began making banana chocolate chip muffins.
Slow but sure the freezer is emptying 😉👌🏻

Friday Nov 25th –
After a quick breakfast of coffee and muffins we picked up Annett from the train station nearby and then drove to Germany to check out a shopping outlet for the morning.
It was a chilly but bright day and shops were entered hopefully and left empty handedly… it was not a successful shopping day for any us, besides Mike finding one shirt.
But that’s not much after leaving an outlet full of sales 😏
We had lunch there as well, at a Chinese buffet.
Little did we know it would mean a crazy long waiting time 😳
The line was long and the people ahead of us took their sweet time, heaping their plates as high as they could while we waited our turn as patiently and hungrily as we could 😬🍴
We left the outlet and began the drive to Annett’s.
