Citrus Cucumber Salad

Citrus Cucumber Salad

I credit my mother-in-law for this recipe!
Iโ€™d never had this style of cucumber salad, until eating at her place but it quickly became a favourite!

Itโ€™s easy to make and so far all whoโ€™ve tried it, generally love it ๐Ÿ˜‰

As most my recipes, itโ€™s pretty open to interpretation ๐Ÿ˜œ Continue reading “Citrus Cucumber Salad”

Nonsensicality’s And Merriment

Sunday Dec 24th –

We didnโ€™t have eggs so Mike got out of breakfast duty and I just made us some yogurt bowls.

โ€˜โ€˜Twas a fresh day indeed, -30 ish being the biting cold temperature that we faced during the four steps to the parents truck that morning ๐Ÿ˜œ

I ashamedlyย admit to being fairly tired during that morning service and because of that, I have no educational tid bits to share

๐Ÿ˜ฌ๐Ÿ˜ฃ

After church, we were invited over to lunch at Mom and Dads.
She said it was potluck but only AFTER I arrived, so she supplied the entire, super tasty meal ๐Ÿ˜‰ Continue reading “Nonsensicality’s And Merriment”

Specimens, In And Out Of The Zoo

Saturday Nov 18th –

Mike was feeling even worse, having been up throughout the night and serenading us with songs of the sickly that morning ๐Ÿ˜ฌ

There was a big christmas craft fair going on in Hilo and Mom wanted to go to it, so the sister and I tagged along.
Mike decided to come too, wanting to get out of the house, though he looked like a much sadder version of his usual self ๐Ÿ˜ฌ๐Ÿ˜œ

The whole thing was christmas themed, holiday decorations filling some booths and holiday tunes in the air. It’s a weird atmosphere for us tropical weather vacationers ๐Ÿ˜œ

I got a wooden sign saying ‘Aloha’ from Simply Signsย and I’m hoping it will go somewhere in our entryway ๐Ÿ˜Š

I also wanted this one, but decided to against it… for now ๐Ÿ˜๐Ÿ˜œ Continue reading “Specimens, In And Out Of The Zoo”

Non Glamorous Goings-On

Thursday Nov 2nd –

Coffee was delivered to me in bed… a nice side effect of the husband having a home office dayโ˜•๏ธ๐Ÿ˜

He went to our place to work and I prepared us some lunch to be toasted up later, worked out and readied myself for a trip into town later that day.

Lunch was just some ham wraps with peppers, mustard, mayo and some seasonings but once toasted, I really enjoyed it โ˜บ๏ธ

I went with him back to OUR house, to blog and since he got the only room with a chair for his work space… I got a trunk and cardboard box in the kitchen to call mine  ๐Ÿ˜œ

Supper was the ‘Peanut Chicken and Zucchini Noodles’ recipe from Sally’s Baking Addiction again…and again, I advise you to try it for yourselves ๐Ÿ˜„๐Ÿด

Food, Floral And Fuel Sources, For Your Information

Wednesday Oct 18th –

It had indeed been a breezy night, the whirling and gusting making for a slightly restless sleep…

or so I was told ๐Ÿ˜œ

All others who occupy the house were away, so ”twas a day of self reflection ๐Ÿ˜๐Ÿ˜œ

Not actually, I just did odds and ends and had to decide what to make for supper.

Peanut chicken with zucchini noodles was the poison of choice as we had zucchini, which isn’t always the case, and the sister had tried the recipe and recommended it ๐Ÿ’๐Ÿป

A colorful variety of veggies came together and a delicious sauce began to blend.

Buffalo Chicken Spaghetti Squash

Due to popularity on my Instagram stories and on our table, I give to you, Buffalo Chicken Spaghetti Squash!

I used the recipe from thecleaneatingcouple.com as a base guideline, but I have changed a few things after making it for us a couple of times, so I’ll write that version out here.

Feeds four (with some leftovers, if everyone was only ‘just ready to eat’ and not ‘crazy hungry’ ๐Ÿ˜œ)

Now, I know this picture doesn’t make it look THAT appealing but that is because it tastes good and I didn’t want to waste time trying to get a good picture, when I could spend that time getting it in my belly!

Ingredients:

1 large spaghetti squash

3 cups of cooked, shredded chicken

1 1/2 cups chopped broccoli

1 cup shredded cheese

1/4 cup shredded parmesan

1/3 cup Frank’s Red Hot Sauce*

1/2 cup greek yogurt or sour cream, whichever you have available Continue reading “Buffalo Chicken Spaghetti Squash”
