Monday Feb 13th –




By the time morning coffee was had, social media outlets checked, the apartment cleaned and laundry done, more of the day was gone then I care to admit.

But as usual, the fresh feeling post vacuum/mop/dust, was splendid 😁

I rewarded myself with an iced coffee β˜•οΈ

I’ve tried more elaborate iced coffee recipes and though good, this simple and fast method sure does the trick.
Stir in your desired amount of sweetened condensed milk and = enjoy πŸ˜πŸ‘ŒπŸ»

‘Lazy’ Cheesecake

I thought for sure that I had shared this recipe before but I guess not and it’s high time to remedy that issue!

I love this cheesecake style dessert for a number of reasons, it’s super simple and easy to whip up and tastes amazing as a dessert, snack or breakfast (preferably enjoyed with coffee at any of said timesπŸ˜‰).

I’ve taken to calling it ‘lazy’ cheesecake because obviously enough, it’s super easy annnnd because I always forget the real name it goes by 😜

(Real name, Sopapillas Cheesecake)

 

 

Ingredients :

 

2 pkgs refrigerated crescent rolls
2 pkgs (8 oz each) cream cheese, softened to room temperature
1 cup white sugar
1 Tbsp vanilla extract

Lemon Orzo Soup πŸ‹

1 onion, chopped
3 cloves garlic, minced
1 carrot, roughly grated
6 cups chicken broth
Β½ cup orzo
1/2 lemon, zest and juice

Sputtering Nothing πŸ’¦

Tuesday Nov 15 th –

 

 

 

The day we forgot the water was being turned off 😬
There were notices posted around the building stating that on Tuesday, there would be no water and we took note and talked about it many times!

Only to wake up on Tuesday and go to run the water and be greeted by a sputtering nothing…

And we were out of coffee beans, so not the best morning around 😏

I heated up some milk and we had chia latte mix with some instant coffee for some sort of caffeine intake and I then settled in to write/edit pictures.

The water actually came back on around 2:00, though hot water didn’t follow until later but it was enough to feel like I could do a few things.

Like bake a lazy cheesecake 😁

You see, I don’t have a ton of dishes, so when I bake, a dish or two probably has to get rewashed and reused a few times during the baking process, thus needing water to bake.

The cheesecake turned out nicer then usual actually, the sugar and cinnamon topping becoming an even golden color over the entire thingπŸ‘ŒπŸ»

I love this super easy cheesecake, (recipe will follow πŸ˜‰) though it’s a bit on the sweet side so coffee would have been delicious with it πŸ˜•
